The Bikini Cocktail
Yields 10 guests
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Put all the items inside a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Next, take off the stove allowing it to cool down entirely. Transfer into an sterilised bottle, cap it and refrigerate it chilled, it can be stored for around one month.
Preparing the Premix: Combine the specified spirits and syrup into a sizeable container, leave to sit for one hour, then strain best through muslin, to ensure it's perfectly clear.
For serving: Pour 85ml of the cocktail base into a cocktail shaker packed with ice, and stir carefully for a minute to cool it down. Pour to a frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch with a quick spritz of mandarin oil over the top.
